Classic steak tartare
This week I present you a recipe for raw beef. Following, I take you to the “classic” beef Tartare recipe. However, for those wishing to be more original I invite you to try the different alternatives proposed in the recipe. Let’s go to the recipe of beef tartare.
Time: 20 minutes
Ingredients: (for 4 people)
- 1 tablespoon of Dijon Mustard
- 20 cl of sunflower oil
- 1 medium egg yolk
- The juice of half lemon
- 680 grams of beef ( 170 gr per person )
- 2 tablespoons of capers
- 2 spring onions
- 1 small shallot
- 70 grams of pickles
- 6 drops of Tabasco
- 1 teaspoon Worcestershire sauce (if you do not have this sauce, you can replace it with Cognac or Armagnac )
- 4 sprigs of fresh parsley
- 4 sprigs of fresh chives
- Salt and pepper
Preparation:
- Finely chop beef with a knife or a chopper (put meat in the freezer for an hour simplify the cutting knife)
- Put the egg yolk, mustard, salt and pepper in a bowl and pour the mayonnaise mounting the oil progressively. Finish with lemon juice
- Chop the onions and shallots. Put into bowl.
- Chop the parsley and chives. Put into bowl.
- Chop pickles and capers. Put into bowl.
- Add Tabasco, Worcestershire sauce
- Mix
- Pour the meat in the bowl and mix gently
- There is no more to do, just serve it! Bon appétit! Enjoy!
Side tip:
Remember to vary the taste playing with different spices (cumin, paprika … etc) or by adding small pieces of ham chips or chopped green olives. You can also mount the mayonnaise with a teaspoon of truffle oil or customize by adding a teaspoon of ketchup.
