Tagliatelle with scallops and shrimp flambées with porto

 

This week I decided to present a recipe containing an ingredient of the season: the scallops. In this recipe tagliatelle I suggest you join the scallops with shrimp and pepper . Everything will be flamed White Port. Let’s go to the recipe of tagliatelle scallops and shrimp.

 

 

Time : 25 minutes

Ingredients: (for 4 people)

  • 4 servings of fresh tagliatelle or gr (the best is to make homemade)
  • 16 scallops (st jacques)
  • 12 prawns 40/60
  • 7 cl white Porto (port)
  • 1 clove of garlic
  • 1 shallot
  • Juice of 1/2 lemon
  • The zest of a lime wedge
  • 2 tablespoons freshly squeezed orange juice
  • 1 red pepper
  • 30 cl of cream
  • A few leaves of fresh basil
  • Parmesan
  • Salted Butter
  • 1 small pinch of Espelette pimento or Cayenne peper
  • Salt and pepper

 

preparation:

  2. Mince the garlic and shallot
  3. Finely chop the red pepper
  4. In a skillet melt the salted butter
  5. Fry in skillet with garlic, shallot and pepper
  6. Add shrimp and scallops (if necessary add a knob of butter)
  7. Drizzle with lemon juice and orange juice
  8. Turn and baste regularly shrimp / scallops
  9. Salt and pepper
  10. Meanwhile put brine heating pasta
  11. After 4/5 minutes of cooking (stove) off the heat add the Porto then flambé
  12. Put on low heat and add the cream, Espelette pepper, zest and basil (keep 2 or 3 leaves for decoration).

  14. Warm it 4/5 minutes.
  15. Meanwhile put the noodles to cook (3 or 4 minutes depending on how you like them)
  16. Remove the pan from the heat
  17. Drain the tagliatelle

  20. Grate the Parmesan and sprinkle plates
  21. Chop the remaining basil leaves and then spread on plates

Tips :

To vary the pleasures you can replace the white Porto, White Martini, white Rum or Cognac. You can also choose not to burn but deglaze with alcohol (dry white wine, Martini, Porto). You can also make this recipe with shrimp or only then replace the scallops and shrimp with lobster medallions. For those who want a thicker sauce you can add a tablespoon of mascarpone.
