Fish & Chips

 

This week I want to introduce to you a traditional recipe from the USA, the Fish & Chips. At the End of the article you will also find some Wine & Food Pairing tips.

 

 

Time: 45 minutes

Ingredients: (4 people)

  • 2 eggs
  • 500g (17,6 oz) cod fillets (4 fillets 125 gr each, 4,4 oz)
  • 150 gr (5,3 oz) flour + 50g flour (1,7 oz)
  • 15 cl (5 fl. oz.) beer
  • 8 cl (2,7 fl.oz.) of milk
  • 4 tablespoons of water
  • 8 large potatoes
  • salt and pepper

 

Preparation:

  1. Put 150 gr (5,3 oz) of flour in a bowlvert-de-vin-fish-and-chips
  2. Add a pinch of salt and pepper
  3. Add the beer and mix
  4. Break the eggs, add the yolks to the bowl and reserve the egg whites
  5. Add milk, water and mix
  6. In another bowl beat the egg whites until they form peaks
  7. Add gently (do not whisk, use a wooden spoon) egg whites in the bowl
  8. Check and remove the skin and the fish bones
  9. Heat the oil in a wok or deep fryer
  10. Cut the potatoes into french fries
  11. Fry French fries. Once cooked, remove it, drain and reserve it in the oven at 90°C (195°F)
  12. Flour the cod fillets of cod and dredge the fish in the batter (one piece at a time)
  13. Fry the cod fillets
  14. Remove and drain each cod fillet
  15. Enjoy!

 

Tip:

You can serve it with a Fish & Chips sauce. For this you will need to mix 2 teaspoons of finely chopped capers, 2 teaspoons finely chopped pickles, a pinch of pepper, 1 teaspoon of finely chopped shallot, ½ teaspoon of chopped parsley and 3 teaspoons of mayonnaise (homemade it’s even better!).
