In this time of Olympic Games I would suggest to celebrate with a glass of champagne!

 

 

 

Champagne Sebille is a young vineyard established in 1975 by the grandfather of the current Maitre des Lieux (like a master of a place): Adrien Sebille. It is located on the town of Bassu, in the region of Champagne-Ardenne.

Originally this property was spread over 25 acres but it got bigger and bigger as time passed. Today it has 2.5 hectares.

Adrian is a young winemaker, dynamic and passionate, “sunk” in champagne since very young, it was only natural that he wanted to follow in his father’s footsteps by becoming a winemaker. He has a passion to do his job by heart while respecting the environment and the land inherited from his parents.

Since its inception this property was part of the cooperative SAVC Chouilly (Nicolas Feuillatte) for some years but only 2/3 of the production go into the cooperative.

Why did you choose the color blue for yours Champagne‘ labels?

Simply because the Sébille family use to use the usual packaging that was too classic, not too young or dynamic. The Blue was an appreciated color by his father therefore, this package was chosen by him and it should change next year …. let´s stay tuned.

What does he look for each year by creating the champagne?

A champagne of equal quality in each year, affordable, and where we could feel the richness of the soil. A champagne that could be “fun, lively, fresh and with a long finish, a wine that easily shared with friends.
But also and especially: A champagne like him: young, friendly and all about giving.

 

Some features:

  • 2.5 hectares
  • Varietals and Blends: 95% Chardonnay and 5% Pinot Noir
  • Soil: clay and limestone, clay-limo
  • Produces 4 types of champagne: A “Blanc de Blanc” (100% Chardonnay), a Cuvée “Reserve” (40% Pinot Noir, Pinot Meunier 40% Chardonnay and 20%), a Champagne Rosé (60% Pinot Noir, 30% miller 10% Chardonnay, 20% red wine) and a Cuvée “Prestige” (40% Pinot Noir, Pinot Meunier 20%, 40% Chardonnay)
  • In reasoned agriculture (weed; use case for creating sexual confusion insects which avoids the use of pesticides; sow wheat in the fight against erosion etc …)

 

Side project:

By 2025 Adrian Sébille would be totally out of the cooperative in order to devote all of his harvest to his tanks “Didier Sébille“.

The anecdote of the property:

As you could understand Adrien is a jovial man, friendly and concerned about environmental issues …. Apparently it shows up in the vineyards to believe this little nest nestled in the bush vine (see photo).

Another anecdote: Do you know the words that Dom Perignon said while tasting Champagne for the first time? “Come my brothers, I’m drinking some stars.
