Fish soup

 

This week I invite you to try an  easy and splendid recipe that you can make with your daily catch or what you bought at yours fishmonger for any fish recipe. Let´s get to the recipe for this fish soup and see the Wine & Food pairing possibilities.

 

 

Time: 1h

Ingredients: (for 4 people)

  • 1.7 kg fish (rock bream, seabass, hake, red mullet, gurnard, or other…)
  • 1 white onionvert-de-vin-recette-soupe-poisson-2
  • 1 red onion
  • 2 leeks
  • 2 carrots
  • 1 stalk celery
  • 4 cloves garlic degermed
  • 3 tomatoes
  • 1 glass of dry white wine
  • 1/2 fennel bulb
  • 1 sprig of thyme
  • 2 bay leaves
  • 3 parsley
  • 2 pinches of saffron
  • 1 pinch of Espelette pepper
  • 5 tablespoons of olive oil
  • salt and pepper 5 bays

 

preparation:

  1. If your fishmonger did not prepare your fish : Shuck them, empty and rinse the fish
  2. Chop onions
  3. Chop the garlic cloves
  4. Wash vegetables and chop them coarselyvert-de-vin-recette-soupe-poisson-1
  5. Cut the fish into chunks
  6. In a large pot, heat the olive oil and sauté onions
  7. Add the vegetables (including onions and garlic) and herbs (thyme, bay leaf, parsley, saffron)
  8. Heat hot water
  9. Put the fish in the pot and add the glass of dry white wine
  10. Pour hot water into the pot with the vegetables and herbs (must be water to heights of ingredients)
  11. Seasoning (salt, pepper) and add Espelette pepper
  12. toss
  13. Leather leave 30-45 minutes on medium heat (check regularly)
  14. Put everything in the blender (the result should be a relatively thick soup)
  15. Enjoy your dish! (you can accompany your fish soup with bread croutons and rouille sauce)

 

Tip:

You can also add mussels, prawns or shrimp
