Frangipane Twelfth-night Cake

 

At the beginning of the year, period epiphany I offer a recipe frangipane twelfth-night cake that will delight  lovers of good food, as we are. Time: 30 minutes (or 3h30 if you make a homemade puff pastry)

Ingredients: (for 6 people)

For puff pastry: (or if you haven’t enough time you can buy two puff pasta)

  • vert-de-vin-recette-galette-frangipane (3)400 gr flour 100 gr + for work
  • 20 cl of water
  • 400 gr of butter
  • 8 grams of salt
  • An egg yolk to give the golden color to the pasta

For the unit:

  • 110 gr almonds
  • 1 egg
  • 80 gr of butter
  • 110 grams of sugar
  • 1.5 tablespoon of Rum (or Grand Marnier)
  • 3 drops of almond extract
  • 1 bean
  • A crown

 

Preparation:

1 . THE QUANTITIES INDICATED ABOVE ARE PROVIDED FOR TWO puffs. So remember to divide the quantities in half and similarly perform the instructions 2-17 double to produce TWO puffs.

2 . Sift flour

3 . Put the flour in a bowl

4 . Dissolve the salt in water

5 . Add brine flour

6 . Knead (if the dough is too sticky add a little flour). You can also use a robot for this operation

7 . Make a paste and then add the butter

8 . Knead (always possible to use a robot)

9 . Form a ball

10 . Flour a work table

11 . Spread batter onto finely table (form a rectangle) using a rolling pin
