Sweet potato and cheddar soup

 

This week with the winter´s arrival, I chose to introduce you an original recipe come from USA. Well! Let’s go to the presentation of this delicious recipe of sweet potato and cheddar soup. A recipe you can serve as main course or as an entry.

 

 

Time : 45 minutes

Ingredients: (4 people)

  • 350 grams of cheddar cheese
  • 20 cl of liquid cream
  • 2 onions
  • 4 sweet potatoes
  • 1 carrot
  • 35 cl of milk
  • A knob of butter
  • Salt and pepper
  • Cilantro

 

Preparation:

  1. Peel the sweet potatoes and cut into small piecesvert-de-vin-velouté-patate douce-cheddar (2)
  2. Peel the carrots and cut it into pieces
  3. In a saucepan of boiling salted water dip the sweet potatoes and carrots. Allow the peal to be able to stick a knife tip through the sweet potato.
  4. Peel the onions and chop
  5. Sauté 5 minutes with a knob of butter in a frying pan
  6. Chop the coriander
  7. Grate the cheddar
  8. In a blender put the sweet potatoes, carrots, onions, cilantro, milk and mix everything
  9. Add the cream, salt and pepper and mix.
  10. Pour into a saucepan and warm slightly (if the texture is too thick you can add a little milk and water)
  11. Off the heat, add the grated cheese and then mix thoroughly for stir
  12. Serve! Bon appetit! Enjoy!

 

Tips :

You can embellish this recipe with small homemade croutons (according to the tastes: chicken, paprika, breast, bacon … etc) or caramelized onions. With regard to the service you can vary the traditional soup plate for bread campaign dug. For a simple companion, get some campaign rolls to your baker, cut a hat and with a tablespoon of the empty bread crumbs, being careful not to attack the inner crust of bread.
