Wine and Food pairing: How to Pair Wine and Christmas capon ?
The Capon is one of the traditional Christmas dishes. Capon is a poultry. It has a tender, delicate, fondant and tasty flesh. It’s fattier than other poultry.
The Capon is traditionally cooked with a stuffing (chestnuts, foie gras, morels, porcini mushrooms, chanterelles, truffles, dried fruit or apple). It can also be roasted, braised or poached.
A few tips: Don’t forget to baste (with the juice) several times during the cooking process to give to the Capon a nice golden color and a crispy skin. A slow cooking process will give the full aroma. The cooking time will depend on the weight ot the Capon.
