Meeting with Domaine Rolet, one of the spearheads of the Arbois appellation.
What is the signature of the estate’s wines? What makes it possible to recognize them in blind tasting?
Regarding red wines, we have something very gourmand and crunchy. I think it is also a certain philosophy of work that allows us to have red wines that stand out a bit, with a lot of substance, balanced structures and tannins. We like reds easy to drink but which also keep their potential to be cellared. Our vinotheque hosts over 40 vintages waiting for wine lovers.
Regarding the whites, we have a great reputation for both the non oxydative and oxydatives cuvées. There is a lot of balance in our whites and still good aging potential. We have topped Chardonnay, topped or un-topped Savagnin, and also blend of the two, called tradition, which is what you might call our signature cuvée. We continue to develop our range of crémant as well. We still look to offer Crémant with a long aging sur lattes up to 60 month for our Coeur de Chardonnay 2016 !
Do you have any particular medium-term projects?
Yes of course. The main project is the organic conversion initiated in 2021 for our vineyards in Arbois. We also trust in the potential for exploring our vineyards and region with a new way to experience oenotourism. Alongside this we also have to manage a lot of uprooting and replanting work in the vineyard. In terms of wines, we are in the process of finalizing and releasing a Crémant Blanc de Noir. It is a product that we did not yet have in the cellar.
To conclude, would you have one or two words to define the Estate ?
That’s a challenge but I would say: dynamism and respect.

Yellow wine is one of the greatest white wines in the world! However, it is a complicated wine to make, rare, which requires
patience.. And above all, you have to learn to love it. There is so much diversity in yellow wines!
The house was created in 1962 Jacques Tissot and his wife Michelle. Son of a cooperative farmer, he began with a polyculture activity (cattle + vine) with his brother. The grapes were at that time sold to a local cooperative. Quickly the desire for freedom. and creation was born. By mutual agreement each of the brothers kept a farming activity. You guessed it, he kept the vines, an activity which was nevertheless deemed at the time to be economically more complex. He then made the choice to leave the cooperative and embark on winemaking and marketing under his own brand.

What is the signature of the estate’s wines? What makes it possible to recognize them in blind tasting?
Your question is amazing and difficult, it is very difficult. So I will tell you it will be the best. I would say that the finesse in the approach to the wine, its attack as well as the notion of terroir can help to recognize them. We are not trying to make our winemakers style appear but to fully express the terroir. A certain salinity is also regularly present in our cuvées. On our red wines from Trousseau we have beautiful bright acidities.
Do you have any specific projects ?
In 2022 we will celebrate the 60th anniversary of the creation of the Domaine. There will be a program specially designed for the occasion, for the moment we keep absolute secrecy on it. From a more ”earthly” point of view, we are in the process of converting HVE (High Environmental Value). We also have some small investment projects to modernize our cellar tools as well as to acquire some small but no less beautiful plots.
