Grilled Spiny Lobster with Caribbean Sauce
This week I decided to present a very colorful recipe, synonymous with sun and based on one of the finest seafood: lobster (langouste). « Chien » sauce has a Creole origin and accompanies grilled fish, fritters or shellfish . Let’s go to our recipe for Grilled Spiny Lobster with a « chien » Sauce.
Time : 30 minutes
Ingredients: (for 4 people)
- 2 lobsters (spiny lobster / langouste)
- salted butter
- 2 cloves of garlic
- 3 spring onions (or chives)
- 1 white onion (medium size)
- 1.5 cloves of garlic
- 1/ 2 red bell pepper
- 1 teaspoon of White Rum
- 1 limes
- 1 tomato
- fleur de sel
- pepper
- 1 small chilli Caribbean (or a cayenne or Matoube can will do it)
- olive oil
- 2 sprigs of parsley
Preparation:
- Ask your fishmonger to cut your lobsters in two parts
- Preheat the oven in grill position
- Place the lobster halves on a baking pan
- Place on each lobster a dab of salted butter
- Bake for 8/9 minutes depending on the size of your lobster. (If you have a barbecue fry the the lobsters starting with the shell side. Once the pearl color flesh back and let leather 5 minutes)
- Meanwhile prepare the sauce chien
- Finely chop the spring onions and white onion
- Zest the lime
- Finely chop the parsley, pepper and garlic
- Take out the tomato seeds then cut into small cubes
- Cut the pepper into thin strips and short
- Deseed and chop the chilli (WARNING: to be determined depending on the desired “hot spice”)
- Mix everything in a bowl with 3 tablespoons olive oil
- Squeeze the lemon and add the juice to the sauce
- Adjust seasoning (salt / pepper)
- Boil water
- Add two ladles of boiling water into the bowl, stir and cover immediately to infuse
- Add a teaspoon of White Rum
- Serve it! (you can accompany it with a mixture of differents kind of rice cooked in Creole way)
