Macaroons with strawberry jam / basil
This week I decided to present you a recipe that will delight young and old lovers. A recipe that can be enjoyed as an aperitif, dessert or for tea. Let’s go to the recipe of macaroons with homemade strawberry / basil jam.

Ingredients: (for about thirty macaroons)
- 210 gr powdered sugar
- 150 grams of almond powder or crushed almonds
- 130 gr egg whites
- 90g caster sugar
- red dye powder
For the jam:
- 300 gr of strawberries (not too riped)
- 125 gr of white sugar
- 1 teaspoon of lemon juice (if it is possible from a fresh lemon and not a ready-made juice)
- 4 large basil leaves
Preparation:
For the macarons :
- Preheat the oven at 160 ° C (320°F)
- Mount the egg whites until it stiffs.
- Add the icing sugar and mix it gently until the mixture is stiffed and shiny
- Sift the almond powder
- Add the almond powder sugar / egg whites then “macaroon” the preparation (fold with a horn / plastic spatula gently on the preparation itself)
- Once the preparation has a soft and brilliant texture, dive the tip of a knife in the dye, then powder and pour this point in the preparation.
- Stir to homogenize the color
- Put baking paper on a baking sheet / or use a baking mat
- Turn the prepared product in a pastry bag and form buttons
- Leave “crouter” (dry) in ambient air for 15 /20 minutes
- Bake for 11 / 12 minutes
For the jam :
- Wash, stem and cut the strawberries in halves.
- Chop the basil
- Put the strawberries in a pan (or heavy-bottomed copper)
- Add sugar, lemon juice and basil
- Mix and infuse 6h
- Bring to a boil (stir regularly)
- Crush fruit pieces against the pan with the back of a spoon
- Cook forty minutes until it is a semi- thick consistency
- To know when the jam is ready, place a teaspoon of jam on a plate, and look at it. If it freezes and slides ‘ slowly ‘ is that it is ready
- Let the jam cool
Assembling the macaroons :
- Place a teaspoon of jam on a macaron shell and join with another macaroon shell
- Enjoy!
