Macaroons with strawberry jam / basil

 

This week I decided to present you a recipe that will delight young and old  lovers. A recipe that can be enjoyed as an aperitif, dessert or for tea. Let’s go to the recipe of macaroons with homemade strawberry / basil jam.

 

 

Time: 2h 45

Ingredients: (for about thirty macaroons)

For the macaroons :vert-de-vin-macarons-fraise-basilic (5)

  • 210 gr powdered sugar
  • 150 grams of almond powder or crushed almonds
  • 130 gr egg whites
  • 90g caster sugar
  • red dye powder

For the jam:

  • 300 gr of strawberries (not too riped)
  • 125 gr of white sugar
  • 1 teaspoon of lemon juice (if it is possible from a fresh lemon and not a ready-made juice)
  • 4 large basil leaves

 

Preparation:

      For the macarons :

  1. Preheat the oven at 160 ° C (320°F)
  2. Mount the egg whites until it stiffs.
  3. Add the icing sugar and mix it gently until the mixture is stiffed and shiny
  4. Sift the almond powder
  5. Add the almond powder sugar / egg whites then “macaroon” the preparation (fold with a horn / plastic spatula gently on the preparation itself)
  6. Once the preparation has a soft and brilliant texture, dive the tip of a knife in the dye, then powder and pour this point in the preparation.
  7. Stir to homogenize the color
  8. Put baking paper on a baking sheet / or use a baking mat
  9. Turn the prepared product in a pastry bag and form buttons
  10. Leave “crouter” (dry) in ambient air for 15 /20 minutes
  11. Bake for 11 / 12 minutes

For the jam :

  1. Wash, stem and cut the strawberries in halves.960268_10152110338373454_1864838756_n
  2. Chop the basil
  3. Put the strawberries in a pan (or heavy-bottomed copper)
  4. Add sugar, lemon juice and basil
  5. Mix and infuse 6h
  6. Bring to a boil (stir regularly)
  7. Crush fruit pieces against the pan with the back of a spoon
  8. Cook forty minutes until it is a semi- thick consistency
  9. To know when the jam is ready, place a teaspoon of jam on a plate, and look at it. If it freezes and slides ‘ slowly ‘ is that it is ready
  10. Let the jam cool

Assembling the macaroons :

  1. Place a teaspoon of jam on a macaron shell and join with another macaroon shell
  2. Enjoy!

Side tip:
